Two milk buns sitting on dark grey plates, in between a salad leaf and a piece of fried chicken.

Milk Buns

This is one of my easiest bun recipes, and they taste so much better than any store-bought buns! They're soft and slightly sweet, and made with just a few staple ingredients. Besides that they're easy to make, they're also fast - you can have these ready in under two and a half hours. Ideal when you want to add just a little more to a lunch or dinner.

Milk Buns

These soft, slightly sweet buns are a great combination with a burger, or make delicious fried chicken sandwiches.

Ingredients

Method

1

Assemble the dough: In a large bowl, combine the flour, sugar, yeast, and salt. Add the milk and butter cubes, then knead until the dough is smooth and passes the windowpane test, about 10–15 minutes. This can be done by hand or with a stand mixer. Place the dough in a lightly greased bowl, cover, and let it rise until doubled in size, about 1 hour.

2

Make the rolls: Gently deflate the dough to release some of the air. Lightly oil or flour a clean work surface, then place the dough on it and gently press it into a square. Using a bench scraper, divide the dough into 8 equal pieces and shape each piece into a ball, placing the seam side down. Transfer the dough balls to a parchment-lined baking sheet. Cover and let them rise again for 45 minutes. Preheat the oven to 180°C (350°F).

3

Prepare the rolls and bake: Beat one egg. Just before baking, brush the buns with the egg wash. If making hamburger buns, I like to sprinkle some sesame seeds on top. Bake for about 15 minutes, or until golden brown.
