Line a loaf pan and preheat the oven to 350°F (175°C). In a large bowl, cream the butter and sugar. I do this in a stand mixer but you can also do this with a hand mixer or just with a whisk. Then, add the eggs one at a time and mix until fully incorporated and airy.
While constantly mixing or whisking, slowly add the oil and then the mashed banana. This should take about 1-2 minutes max.
In a separate bowl, combine the dry ingredients. Add the dry to the wet in about 2 to 3 additions, gently folding the dry ingredients in with a spatula till combined. Do not overmix.
Pour the batter into your loaf pan and bake for about 75-80 minutes, or until a toothpick inserted into the middle of the bread comes out clean or with a few moist crumbs stuck to it. This banana bread needs to bake for a long time because it's quite a lot of batter! I take mine out of the oven when the internal temperature reads about 187°F (86°C), but the toothpick test should also work fine.
